I always use my bread machine to knead only. I've tried using it to bake also but I don't like the shape of the bucket and before didn't know about taking out the blade before the bake cycle so didn't like the hole it left in the bread. I like that I can open the lid any time during the kneading cycle so I can add water/ flour to adjust for the dough texture, scrape the corners so all the flour gets incorporated, add raisins at a later time, etc. I also use the time while the machine is working to measure out and prep for my next batch of bread dough.
