Not quite correct. Even though butter contains almost no protein, even trace amounts can cause a reaction. This means it should not be considered safe for people with a milk protein allergy. Keep up the good work King Arthur Flour. The butter substitutions are invaluable for those who have dairy allergies and ar unable to use butter.
