While Texas heat can be a bit much for any of us, Frances, we think you can make a stabilized frosting work for this amount of time. A few other helpful hints: 1. Try finding a room with air conditioning that you can close the door to while you are setting up (I once used my sister's bedroom for two hours while we blew up enough balloons to fill the hallway). 2. If you don't have a cooler room to use then be sure to keep it out of any direct sunlight. 3. Finally if you are doing multiple tiers then place a cardboard cake round between each tier as this makes slicing easier with a warm cake.
