Jen, that's a good question! Italian buttercream will keep in the refrigerator for a couple of weeks, but it tends to separate a bit when frozen. It's still fixable, but if you're looking for something that's ready to use right away, we don't recommend making more than you can use (or share with others who will use it) within a week or two.
