Hi Martina, we generally recommend light-colored metal baking pans that conduct heat well. Aluminum is often the material of choice for professional bakers. Our loaf pans are a combination of steel and aluminum. I don't know that Keto breads require a special kind of pan, and the greased parchment paper you are using should have little or no impact on how your pan functions in terms of heat transfer.
