Hi Whitney, stoneware and ceramic pans are similar in terms of baking properties and also can vary a lot in thickness and composition, making them fall into the same "wild card" category. The same advice goes: you can still get great results with a ceramic pan, but you need to get to know how it bakes and adjust accordingly.
