Dark metal pans 9x5 or shiny aluminum pans 8x4 are my choice. I always spray my pans. I also proofed my dough in a Anchor Hocking bowl. Then on the second proof I decided to try to bake it in another clean Anchor Hocking bowl. I am new to baking bread and wanted to see what happens. The bread turned out looking like a curling puck :) and took 2x as long to bake. The bread turned out delicious although it was hard to figure out the best way to cut it.
