Thanks for the informative post! A hint to baking brownies in a glass pan: take them out of the oven while you have a spot in the center ( about 2 inches in diameter) that 's still undercooked. As the glass retains heat much longer, it will continue to cook out of the oven. The chewy edges are a bonus!
