Hi Marilyn, potato flour helps baked goods remain moist by attracting and holding moisture, and also contributes subtle color and flavor to your bread. While cornstarch doesn't offer all the attributes of potato flour, it can help with moisture retention. For more information about potato flour and suitable substitutions, check out this blog post.
