Hi Robin, yes, including the tangzhong method should extend the shelflife of your cinnamon rolls, even when you refrigerate the dough overnight. If your end up with a warmer dough temperature when you include a tangzhong starter, then you may want to reduce the first rise time a bit before refrigeration. Maybe try a 30-45 minute first rise before refrigerating your dough.
