Hi Laura Lee, it's fine to let the tangzhong cool and then store it in the refrigerator for a few hours or even overnight. If you have time to bring it to room temperature before adding it to your bread, that's great. If not, just be sure to compensate with slightly warmer liquid when you mix the dough.
