I bake bread weekly (we don’t use commercial breads) and I was, long ago given a tip that has really made a difference. I substitute 1/4 cup of potato flour or instant mashed potatoes for 1/4
Cup of King Arthur Bread flour, for rack loaf in the recipe. The potato makes the bread softer and moister ani it stays fresh even after two weeeks in the freezer.
