Hi S, if you normally use our unbleached all-purpose flour for your rolls, and want to try the same recipe with our bread flour and also incorporate a tangzhong starter, then the starter should mostly function to keep the rolls soft and moist longer. However, bread flour does generally contribute to a lightly stronger rise because of its higher protein content, so you may notice a bit more loftiness in your rolls as well.
