David, do you notice that the challah with tangzhong doesn't have any flavor? Do you need to add more salt? When i use tangzhong to make my challah it tastes very bland. which recipe do you use? i love the recipe from this site Mollys challah. i make it using a tangzhong and i find the taste becomes neutral?! How about you?
