Amendment needed! Tangzhong is a Chinese method, as evidenced by the fact that tangzhong is the phonetic spelling of a Chinese word (燙種) and slightly different from the Japanese method of Yudane (ゆだね / 湯種). The Yudane method involves pouring boiling water to create a slurry and no cooking (youtube.com/watch?v=hWamHm0tfcI). It's understandable for a non-Chinese or non-Japanese person to mix them up, but considering that KAF has a large following in the US and worldwide, I sincerely hope that you would correct this asap to avoid perpetuating cultural ignorance and also further misinformation.
