Agreed, it's really frustrating to see Western people continually label Chinese culture and Chinese techniques as Japanese. The cooked flour slurry is not only used in Chinese bun making but also in dumpling skins. If people took more time to inform themselves about Chinese culture, they wouldn't make these mistakes and assume everything they think is good is Japanese...
