Hi Janice! If wheat is the issue but gluten isn't, so you can have grains like rye or spelt, we haven't tested making a tangzhong with them but you absolutely should give it a try. We did it in whole wheat bread recipes and it worked, so you could try it in spelt or rye recipes. If it's gluten that's the issue, we tested it in that same blog in gluten-free bread and found that it made no noticeable differences.
