Aaaah ok! Yes, I counted the milk as 87%, not 100%. That is better now, thank you.
Your article made me realize that I've been using european large eggs (+63g) instead of american ones (56g), I didn't know they were different. That means I had a bit more egg, and thus, liquid in my recipe. What does that change for a bread ?
