Hi there, after having done the Japanese Milk Bread Rolls multiple times, I read this article, and learned about the 75% hydration. I calculated the hydration in the Japanese Milk Bread recipe (water, milk, egg and butter, with the conversion available in one of your articles), and the result is 72%. Is that normal ? How should we correct this recipe if needed ?
