Fascinating. I've been using this technique for injera, tortillas, and roti for years because I read a bunch of blogs and tried everybody's mom's and grandmother's recipes until I found methods that worked. (I'm a white girl in Mississippi and don't have a lot of Eritrean and Indian grandmas around to show me stuff - gotta love the internet). I can't wait to try this in a yeasted bread recipe.
