Hello guys! I am a baker and have a business selling sweet breads. I am trying to substitute the bread softener I use to something more natural. So, with this Tangzhong method, how much water and flour I need for the process if the recipe is as follows: (based on baker’s percentage) 100% flour 50% water Thanks!!!
