TORTILLA---for years I have been using VERY HOT water. The tortilla are soft, tender and can be rolled out very thin. I have also tried boiling water. I make a hole in center of dry ingredients and pour in Hot water. Then use a fork tossing ingredients over top of water. Stir to make moist dough. Take out and put on counter. Repeat till all ingredients are used. Finally dust with flour and make a soft warm dough, put back in bowl covered with towel. (Ok if a little sticky). Put extra flour in a small bowl. Break off a small ball of dough and roll in flour, set aside. Put in mixing bowl and cover to keep moist covered. Dust surface and roll out small ball of dough till thin. Pick up rolled out tortilla and transfer to a medium hot grill or skillet. Cook for a few seconds till soft bubbles form. Flip over and repeat. Finally put between dish towels to keep warm or container covered. DO NOT BURN. It should have some brown freckles. It will sweat in a container, make sure covered with a towel. Best soft tortillas.
