Thank you for all these helpful suggestions. I have a reputation among family and friends for being a pretty good baker. However, since we moved into a new apartment last year, all my favorite recipes (every single cake, pie, muffin, brownie, etc) have needed a LOT longer than expected. Even then a most of my previously trusted recipes have come out under baked! Until now, I always just used a toothpick and my experience of knowing when it's done. Finally bought an oven thermometer and lo and behold, the oven temp is about 25 degrees below what the indicator reads.
Going forward, I'll keep using the oven thermometer as well as the ThermoPop we got for cooking meat! Thanks again.
