Baker's Hotline - You might also want to put in the article - "Know your altitude!, Above a certain altitude you may need to adjust the recipe, the temperature, or the length of time in the oven, (and put in your link to that). And know you're general humidity. The dryness of an arid climate may affect the dryness of your backed good, and you'll need to adjust the finished temp of the baked good up or down accordingly." There are many things in the dry Rockies that I don't dare try to fix on a rainy day because if I fix it on a rainy day it will come out dramatically different than on a normal day, Homemade candy and more tempermental baked goods, especially, and I'm just not into keeping a lab notebook for each recipe to to remember to adjust recipes first to high altitude and then possible humiture.
