Banana bread was the last thing out of the oven before bed. Full size loaf, passed the toothpick test...silly me. Woke up to have some for breakfast. Cut a slice and the bottom was firm pudding. Ugh! Cut top from the bottom. Thought about your pan fry idea. I carefully made half inch slices and laid them on foil in the toaster oven. Put it on bake at 300. It cooked through. Not as nicely as a proper baking, but butter on a warm non-raw slice was still tasty.
