Hi Gwen! The center of cakes rise or dome because the sides of the pan set the sides of your cake long before the center finishes baking and rising. This doming can be minimized by using a lower oven temperature or cake strips to insulate the sides of your pan. If you're interested, we have a whole blog article on how to bake level cakes.
