Making one loaf of banana bread takes a bit of effort so you don’t make it often. So I started doubling the batch because mashing two cup of bananas vs one takes very little effort. Then I came across those eight mini loaf pans, so I started using them. With the recipe doubled it made twelve mini loafs great individual servings. When the loafs are completely cold wrap each one in plastic wrap then a ziplock freezer bag which will hold six. Banana bread freezes great, so when you defrost each one at room temperature they taste freshly made. Banana bread always tastes better the next day anyway. I find baking at 375 takes about 35 min. Now I make one or two dozen at a time and takes about 45 min longer with mixing and baking. (write down the measurements when increasing the batch)
