Hi Matt, it sounds like you might want to take a look at this post on our blog about baker's percentage. It's the most accurate method to use when scaling up recipes. While you could simply multiply all of the ingredients in the recipe by eight, you'll get better results if you use the method described in the blog. Happy banana bread baking! Kye@KAF
