One thing I noticed is the "slickness" of the tooth pick or skewer. Some seem more slippery than others so the crumbs/goo don't cling as well.
I had mixed some tooth picks when I restocked and noticed the difference in the pick surface. I tested the inner two muffins of a 12 pan with two types of picks; the smooth pick tested baked and the rougher pick tested undone.
It may explain why I had no luck with the metal testers.
I've used a Thermapen for last three years but when I do not have it available (like when baking at my kids' homes), the tooth picks work with other clues.
