I've used the sticking a wooden toothpick in and see if it comes out clean technique, and more recently I've used a thermometer to test the internal temperature, especially of large sourdough loaves. But the main method I use, and you don't mention it at all, is my ears! If my bread or cake is still sizzling, even if ever so quietly, it's not ready.
