Hi Tanya, we've outlined some basic guidelines for using a convection oven in this article on our blog: Convection or no? We recommend turning the fan off when baking quickbreads, but it's great for making artisan bread, pizza, biscuits, scones, and large batches of cookies. When using the convection setting, try turning the temperature down by 25 degrees and checking for doneness five minutes early. Happy baking! Kye@KAF
