Hi Marie. Inconsistencies can be really frustrating! Were they different recipes? Using different pans? Different temperatures? There are a lot of factors that can come into play. Our best advice is to take notes, so you can track what works well and what doesn't. Every pan and every oven is different! Annabelle@KAF
