You might want to try different recipes vs. the ones you have been making that come out dry. I like to cook in a clay or stoneware bread pan. I find that glass can burn the outside edges, and sometimes the dark pans make the bread too dark on the outside as well. I have tried about 10 different types of pans. My favorite quick bread recipes contain buttermilk which seems to make them more moist . Hope you find what works best for you . It's a matter of trial and error.
