Here are a few of my tips: To get a perfect bake for any quick bread I will bake at 350 degrees for 30 minutes then lower the oven to 325 for the remainder of the bake. This keeps the bread from getting too brown and insures that the inside is done. Usually my banana bread takes 1 hour to bake. I use a long skewer to test. I also let the batter rest for about 15 minutes before baking to give the gluten a chance to relax a bit. I always get that nice crack in the center with this method and a nice fully baked crumb.
