Hello my starter, or technically at the stage it is at levain, has been neglected for about 8-9 months in the fridge. It is a 40 year old levain from France that has come back from many times of being neglected and becomes so active after the 3rd day I have to feed it 3 times a day if I do not refrigerate it. I just recently pulled it out to refeed it and has hooch. However the very middle part of it on the top was a dry gray color I can’t tell if it was a little fuzzy or not, smell has a very sweet cheesy like dairy smell to it but there’s no pink or blue or green color in it. I scraped all that off the top and refed it it was a very thick paste like consistency though before I refed it. What are your thoughts?
