thank you for this post. i have been reading and experimenting with starter since october. i have only made 3 loaves of bread.the 1st being extremely dense, but totally my fault. i didn't bake it when it was ready! the 2nd & 3rd were good, but not great. i am not getting a good amount and a good size of bubbles in my starter?
if i do get large bubbles they are mostly on the bottom, not throughout.
if i get good bubbles i don't get a good rise (unless i am missing it?).
my main concern is that when i go to feed my starter, i have a crusty top. i have been trying to remove that layer before feeding. does that happen to anyone else? why is that happening? what shall i do with it? thanks.
