Hi Sandra, if you've been feeding your starter with bread flour and want to switch to feeding with organic AP flour, this should work fine. You may notice the starter is a bit thinner in consistency with the AP flour, but this is as it should be. You're starter will actually be getting a little better meal with the AP flour, since AP flour has a higher starch content than bread flour, and starch is what is converted to sugar for the starter to consume and ferment.
