Hi PJ, if you're talking about beginning another starter from the discarded portion of starter that is just in the very early days of creation, I wouldn't recommend it. It's hard enough to get one starter going, so best to focus your energies. And, if you wanted to "gift" these early discards to someone else, this may prove a confusing gift. In some ways it's easier just to start from the beginning, so you have a sense of where you are in the process.

On the other hand, if you have a fully mature starter and would like to begin another starter from recent discard, this should work just fine. And gifting mature discard, that need only be revived for baking, is a true gift. We recommend refrigerating your discard and using it within a week or two.
