Thank you for your quick response Barb. I have my starter in 1 quart wide mouth glass jars as you mentioned. I took a temperature reading this morning and they were 77* and 80*. I am using rubber bands around the jars to measure starting and doubling expectation. The jar with the 2:1:1 ratio doubled for the first time during the night. The jar with the 1:1:1 ratio rose about 3/4 of the way. One thing changed last night when I fed it. I ran out of KA flour. I had some flour in another glass container that quite frankly I hadn’t used because I don’t know exactly what it is. I think it is all purpose flour, but I’m not sure if it is unbleached or not and I’m not sure of the brand, but it worked. The KA flour I have in my cupboard is unbleached AP flour with a use by date of 12/30/2020. Does the age of the flour make a difference?
