I started my sourdough starter 3 weeks ago and I have yet to get it to double. I am using KA all purpose flour. I started with 1:1:1 method by weight. I have moved my starter to a warmer cupboard as opposed to the top of my refrigerator. I am discarding/feeding every 12 hours. My starter is rising by about 50% and has been doing so for the last two weeks. I took 226g of starter and fed with 113 g of flour and water each and started another batch for comparison to see if I would get a different result, but I am actually getting less rise in that jar. Both of my jars smell good and I have no had any problems with hooch. I'm stymied but I don't want to give up. What are your thoughts?
