I am a newbie. My starter seems to be doing well and I've had 2 spectacular (to my eyes and mouth) loaves. However, when the last loaf was in the oven I remembered about the float test. My starter flunked. It has been rising - doubling within a few hours. My starter is 3 weeks old. When I feed it I've been using 10-20% WW with the AP. Both KAF. And I use your ratios of 1:1:1. If I'm not going to be baking I put it in the fridge and take it out 24 hours before using it, feeding it when I do so.
