If you added too much water or flour to your starter by accident, or discarded the incorrect amount of starter, I wouldn't worry too much about it. You can just go back to feeding your starter with the correct ratio of ingredients when it comes time for the next feeding, and adjust the consistency as necessary with a bit more flour or water, to bring you back to that thick, but easily stirrable paste that is typical of our starter recipe right after feeding. The discard resulting from your mistaken feeding might be a bit different in consistency as compared to normal discard, so if you use it in discard recipes you may have to tweak the water/flour in the recipes accordingly.
