Hi Katy, great job getting your sourdough starter up and running—now the fun part begins! While it can certainly be challenging to try to create a perfect loaf of sourdough bread, and frustrating when you fall short of perfection (or anything even close), but that's what is so great about baking sourdough bread—there's always more to learn! I've been at if for almost 20 years, and I'm still learning new things every day. I would recommend trying lots of different sourdough bread recipes, starting with our Naturally Leavened Sourdough bread recipe, because our Sourdough Baking Guide walks you right through this recipe, with lots of help along the way. Be brave and experiment with different types of recipes like our Pain Au Levain recipe and our No Knead Sourdough Bread recipe. When it all seems like too much, go a different route and try something a little less demanding. Every recipe will teach you new things about the process, and gradually you'll find the methods and techniques that work best for you. And remember, we are happy to help you along the way! Good luck, and let us know how it goes.
