Hi Susan, I'm sorry for the delay in responding to your question, and hope by now that your starter is rising like a champ! If this isn't the case, but you're seeing some rising, then I would definitely switch to twice a day feedings. This is because once the yeast kicks in, it's important to feed more regularly. Start feeding twice a day with the 2:1:1 ratio, and then gradually phase in the AP flour and the 1:1:1 ratio. The goal is to find a feeding routine that allows you to feed the starter twice daily when it's at its peak of rising, or just beginning to fall. Waiting until the starter falls significantly tends to lead to more sluggish yeast behavior. Since your home is so cool, this may also be slowing things down as well, so finding a spot that is at least in the low 70's may be helpful. If you're worried about using up too much flour, consider maintaining a smaller starter, at least until you achieve a mature starter. I hope this helps! Let us know how it goes.
