Hi Barb. I've been maintaining my starter for around 3 weeks now. After about two weeks, I tried to make a loaf, but it barely rose and was very dense. I refrigerated the starter after that for about a week. I just started feeding daily again. My starter has a decent sour smell to it and is bubbling. However, it is not rising and there is some excess liquid on top every time when I go to feed it. I've been feeding it with equal parts flour and water. It also is not passing the float test, but some small pieces of the starter are rising to the top along with air bubbles from the sunken starter. How do I fix this?
