Hi Sandra, I apologize for the delay in responding to your question and hope by now you've been able to find whole wheat flour! If not, you could certainly change the type of flour you're feeding your starter to unbleached all-purpose flour. Your starter may behave a little sluggishly when you change flours, but after a few feedings at room temperature the organisms should begin to adjust to the new feeding routine. If your starter is a mature starter, then it can also survive for quite a long time in the refrigerator, although it will need a few days of twice a day feedings at room temperature on the other end to bring it back to full vitality. Give your starter a feeding, let it sit out for 2-4 hours (or until it starts bubbling) and then refrigerate. I hope this helps! Let us know how it goes.
