Hi Barb, I received a white starter from a neighbor and started feeding it AP Flour got it on a twice a day feeding schedule and it performed great, rose more than double. I was feeding it about 75gs of ap to 50 gs of water. Then I ran out of AP and only had Whole wheat for a couple of days. Then I got more AP and tried to do a mix of the two to ease my starter back to normal. I had a good week out of it but now it has very sluggish rises and it peaks fast and quickly recedes. I gave it a new home. I fed it early. The weather is warmer. I am just not sure how to get it happy again? any suggestion would be helpful.
