I pulled my old sourdough starter out of the back of my refrigerator yesterday to see if I could revive it. It was almost completely solid (think the consistency of play-doh) , but it smelled and looked fine (no fuzzy mold). I would guess that the last time I fed it was a year or more ago. I scooped out 2 oz and whisked it with some fresh flour and water. I've fed it twice more since then and it seems totally fine. In fact, it smells amazing, just like delicious yeasty bread. Have you ever heard of starter being revived after such a long time? Is the starter safe to use (or is there a way to tell if it's NOT safe to use)?
