Hello! I started a starter 4 days ago - whole wheat flour and water. Today I checked it and while it’s nice and bubbly and stringy like I remember my mother’s starter looking like from years ago, but it has a brown crust on top of it. I have a very loosely woven cheese cloth over the top of my jar. Is too much air getting in? Should I just stir the hardened bit in? Thanks for your help!
