I have just started making a whole wheat starter and am on day 3-4 at the moment. I have just realised that I didn't read the instructions properly on how to start it off and I've been discarding 4 ounces per feed rather than only keeping 4 ounces, whilst feeding 4 ounces flour and 4 ounces water.As a result I've been gradually increasing the volume in the jar.
I think essentially I've been keeping way too much starter and potentially as a result under feeding it. It's been bubbling a bit and rising a bit, and it doesn't smell nasty or anything. Do I need to do anything to help it out or is it too late and I've already killed it ? I'm not sure how to rescue it ! I thought of just going down to 4 ounces now as per the instructions but I didn't know if this would be damaging either. Any advice would be great!
